The Jeffery Family Farm
Tracey, Joe and their two boys - Joseph and Matthew and four lovely dogs live on the shores of Strangford Lough in an area of outstanding natural beauty. Their Farm is in rural County Down - framed by the Lough on one side and the Mountains of Mourne on the other, located approximately 30 minutes drive from Belfast. They run a small Farm and they live off the land. Their small rarebreed Dexter Cows are grass fed.
Joe is a Gardener and Tracey keeps him very busy with her long list of Vegetables and Fruit that she needs for her kitchen! They grow uniquely Northern Irish Fruit Veg and Herbs and this homegrown produce forms the basis of everything Tracey cooks and she loves to cook and bake!!
The Jeffery family Farm is alive with activity from chatting to Chickens and Ducks, or scolding Paddy the dog for being badly behaved!!
Tracey is known for her traditional northern Irish cooking. She only cooks produce that is in season and anything she doesn't grow she can get from her neighbours as they have a bartering system. Tracey swaps her leeks for her neighbor's potatoes for example. It's very effective and it means that there are no food miles at all.
Tracey's Farmhouse Kitchen
Breathe deep and slow down while you reconnect with land and food in Tracey's Farmhouse Kitchen.
You'll be welcomed to Tracey's kitchen with Tea / Coffee and Tracey's homemade Soda and Wheaten {brown} breads with handmade, handrolled butters - dulse {seaweed}, original and Tracey's homemade Jams. Northern Ireland is synonymous for its Irish breads with special soda bread flour a key ingredient in making northern Irish soda bread. It is the soda and potato breads in the North of Ireland that make an Ulster fry unique to this part of Ireland.
Tracey's Walled Garden and Orchard
You will take the very short walk out into Tracey's Walled Garden and Orchard and from there into the Kitchen Garden where Tracey grows vegetables and herbs. You will pick the veg and herbs needed for lunch. You will hear all about our heritage fruit and vegetables and you will appreciate the provenance of the dishes being prepared.
Cooking Class & Tasting
Back to the kitchen - where you will roll up your sleeves and get hands on. You will create a delicious lunch - uniquely Northern Irish using kitchen garden ingredients and Shellfish in season from the Lough.
Tracey will have a tasty homemade dessert ready, which will be an irresistible finish to your lunch.
