Bombay Sweet Shop & Chef Girish Nayak
Drive for approximately 30 minutes and proceed to the Bombay Sweet Shop, an excellent initiative by young Chef Girish Nayak to bring back the sweetness to the Indian dessert culture. As various other culinary and lifestyle influences took over the authentic Indian cookery and celebrations, the 'mithai' lost its charm somewhere down the line. Chef Nayak took the onus of following a sugary sweet trail across the country, discovering recipes, to redefine modern India's perspective towards its tradition of sweets. And essentially, the diversity of Indian desserts and sweets found a new meaning and identity at Bombay Sweet Shop!
Dessert Art Demonstration
Chef Nayak initiates you into the world of traditional Indian sweets - Boondis (little syrupy balls of chickpea flour), Laddoos (made from smaller Boondis), Pedha (creamy chunks of flavoured dried milk), Patisa (flaky and sweet squares of chickpea flour) … to name a few. Try your hand at making the regional favourite 'Modaks' under the supervision of the talented young Chef. Modaks are tender dumplings made of rice flour, filled with various sweet ingredients, and steamed.
High Tea Experience & Sweets Tasting
Then, enjoy a high-tea comprising of local savouries with a twist and the famed 'chai'. As you leave, you'll find yourself drawn to the old-fashioned goodness of Indian desserts, one piece at a time… A box of 'mithai' is just that, the luxurious sweetness welcoming you to a world of sticky finger and delightful memories!
Your tour concludes with a transfer back to the pier.
Your Host: Chef Girish Nayak
Girish's interest in the culinary industry began at the age seventeen when he interned at ITC Grand Maratha in Mumbai. He enrolled himself at the Welcomgroup
Graduate School of Hotel Administration where he fell in love with the world of pastry. He developed a strong foundation in the art of baking and pastry making post the completion of his course at the Culinary Institute of America in New York. He had the opportunity to work for the famed Chef Johnny Iuzzini, the legendary Pastry Chef at Restaurant Jean George, and in New York’s finest pastry kitchens and bakeries, including Daniel, Bouchon Bakery, Bouley Bakery and Le Bernardin. Also Girish worked as a bread baker at Amy Bread Bakery in Chelsea Market before he decided to take a break and travel within India, to learn more about the techniques and history of sweet making. Post this culinary journey, he joined the Hunger Inc. team to explore working with traditional Indian sweets and mithai in a reimagined, contemporary style with their newest offering, Bombay Sweet Shop. Girish joined the team in 2018, to bring familiar flavours from around the country, using a mix of traditional and modern techniques to create an offering that is fun, seasonal and created to rekindle the love of Indian sweets
