Board your coach and enjoy driving around the distinct Tasmanian landscape to the nearby town of Franklin. You’ll arrive at the Bowmont, a two-story heritage listed building on the banks of the Huon River.

The Bowmont

Originally built in 1906 by renowned builders J. Dunn & Son, the Federation Free-style design and construction was typical of the builder’s work which can still be found throughout many parts of Hobart. A much-loved building of the Huon Valley, the former bank and maternity hospital has been reimagined using traditional methods that cherish and preserve its colourful history. Hear about its many previous lives and the unique stories it holds during your time emersed with Analiese Gregory’s masterclass of techniques with local ingredients before enjoying lunch prepared by the world-renowned chef.

Masterclass and Chef Prepared Lunch

Upon arrival be greeted by Chef Analiese Gregory and her team. Watch, learn and taste as Analiese takes you on a cooking journey over an open fire demonstration. You will enjoy the canapes made by Analiese as she brings the rugged food culture to the forefront. Continue inside the Bowmont, where the excitement continues with a up close cooking demonstration. As Analiese finishes the menu items in front of group, she will talk through the way the ingredients are used. Of course, the cooking experience will be followed by a tasty lunch!

After the lunch, take a short walk back to board the bus to return to the ship.

Chef Analiese Gregory

Hailed as one of the most exciting chefs of her generation, Analiese Gregory has swapped the dazzling Michelin star restaurants of Paris’s Le Meurice and Sydney’s Quay for rugged Tasmania, where she forged a new life in a century old cottage at the bottom of the world in Tasmania. She is the author of the recently published book How Wild Things Are, has been 2IC at Sydney's three hat Quay, and honed her skills in the kitchens of Michelin-starred stalwarts The Ledbury, Mugaritz, and Michel Bras restaurants in UK and Europe. You will be mesmerized on how the described ‘forage-master’ recounts learning to hunt, fish, forage and live seasonally, closer to nature.
