Binicomprat Manor House, Meet your Hosts: Oliver Biel & Deborah Piña Zitrone

Binicomprat is a gorgeous old family "possessió" (landhouse) with a long and intricate history dating back to the XIII century. It is located between Algaida and Montuiri at the feet of Randa Mountain that dominates the central plains of Mallorca, and the family owners run a small winery focused on local varieties grown following biodynamic agriculture principles aiming for high quality wines that reflect the essence of Mallorca, its soil and climate. Their passion and tenacity to overcome the phylloxera pest shows their commitment to the land, its roots and legacy. Nowadays OM is a well-recognized winery as well as a charming Mediterranean heaven in the center of the Island.

Once we arrive at Binicomprat landhouse you will be welcomed by our hosts Biel Oliver and Deborah Piña. Biel is one of the youngest members of the Oliver-Moragues family that has lived and worked at the estate for 15th generations since 1511. Deborah is a well renowned chef and food connoisseur that has appeared several times on TV showcasing her craft.

Main Dish Show Cooking with Deborah

We will start the experience with Deborah's show cooking activity which will take place in a the most typical Mallorcan patio. She will tell all you need to know about Mallorca's gastronomy, the dish selected, it's ingredients and how to cook them properly. The main dish varies depending on the time of the year you will visit the Manor house.

Estate, Manor & Vineyards Visit with Oliver

While the main dish is slowly cooking, Oliver will lead you to a visit of the Estate and of the Manor. He will tell the rich history of the place and the family, its most iconic features and the long-lasting heritage including its family ties.

Proceed afterwards to the vineyards where Biel will address several topics such as placement, climate, soil, local varieties, biodynamic agriculture with ecosystems interdependencies, all while admiring inner Mallorca's landscape sheer beauty: the Forest, the Vineyards and farms.

Wine Tasting, Aperitif & Lunch

After the walk, reach the big table under the tree shade where both Deborah and Biel will share the spotlight during the wine tasting accompanied by hands-on Mallorcan entrees.

Deborah will teach the group about Mallorcan black bread (traditional whole flour, no salt) and how to eat it as a local with some typical products such as Sobrassada, Ramallet Tomato, Olive Oil and cheese.

Meanwhile Biel will conduct the tasting of 4 of wines produced in the estate. These wines come from ecological biodynamic agriculture focusing on the essence of the fruit from local varieties: Manto Negro, Giró Ros, Gorgollassa, Moll, Callet… which are much more adapted to the climate but also to the local gastronomy and lifestyle.

Your main dish is now ready and will be served accompanied by red wine and water. As a sweet note after this traditional Mallorcan lunch, you will be served a delicious Gató d'ametlla amb gelat (gluten free almond cake with ice cream).

Time to re-join your bus and start the 40-minute drive to the port of Palma.
