Excursion S.a.l.t. the art of cooking: andalusian culinary revival with award winning chef charo carmona tour at Malaga

Cruise line: Silversea
Difficulty:

After approx. 1 hour drive by coach or van, arrive to Archidona, to visit one of Andalusia’s most beautiful public spaces, Plaza Ochavada. After a surprise culinary visit we head to Antequera, an ancient whitewashed village of spectacular natural beauty located in the geographic heart of Andalucía, between Granada and Sevilla, Córdoba and Málaga.

Chef Charo Carmona

Chef Charo Carmona sees cooking as a gateway to understanding the past. With rigor, passion and respect, she has spent the last 25 years pouring through ancient recipe books alongside historian & cultural gastronome Fernando Rueda.

The result: the revival of a cuisine dating back to the 17th century. Charo's command of the Andalusian hinterland is masterful. From cold gazpachos and seasonal salads, to long cooked stews & meticulously prepared sweets, her cooking is slow, soulful and deliberate, using only products of proximity - cereals, vegetables, olives, wheat and grapes, all sourced from the fertile valley of Antequera.

Much more than a kitchen, Arte de Cozina is a lifelong project shared passionately with all who enter. Charo has developed a multi course tasting menu exclusively for you, showcasing the depth and breadth of Antequera's cuisine.

Dishes are paired with regional wines of the Malaga and greater Andalusian DOs, including sweet Moscatell, Romé and Syrah from nearby Ronda and 10-year aged Pedro Ximenez sherry.

Your Hosts: Mayte & Chef Charo Carmona

Mayte has deep roots and knowledge of the culture and cuisine of her native Málaga, she brings charm and a contagious passion to her work. A natural storyteller and seasoned guide, Mayte's unique perspective and knowledge of the Andalusian kitchen go unmatched. She lives on a beautiful cortijo, a typical Andalusian farm house, and loves sharing anecdotes of her life in the kitchen and traditional lifestyle of Spain's south with her guests.

Charo Carmona, 7th generation antequerana, loves her land and her cuisine, and shares them both with open arms.

Following your lunch and visit, re-board your coach for the one-hour return drive to the pier.
